Chicken Stock. Now, you can very easily just buy a chicken stock cube and mix it with water. We all do it when were in a rush and that's fair. However for basically free, you can make a tastier stock that does not include palm oil like so many stock cubes use. With similar intent to the veggie section, palm oil is bad for the environment. But were talkin about the latter, the free part. When you make any food, there's gonna be offcuts; onion skin, garlic skin, peeled carrots, off cuts of celery, parsley stalks, you get the gist. The same goes when your making a chicken dinner, cooking with thighs or drum sticks. Realistically you're not gonna eat the bones or carcass are u pal, BUT you can stick them in your freezer for when its chicken stock time. This goes insanely hard with the chicken noodle soup recipe. The recipe bellow is a loose list of the quantities, as long as u have enough for the litres of water, you can literally use whatever you have saved up!
Ingredients for 1 litre
1kg chicken bones, carcass, wings as to be fair they're cheap
1 carrot
1 onion
1 leek
1 celery
1 garlic clove smashed
Parsley stalks, sprigs of thyme, bay leafs
Peppercorns as many as u want, 4-5 for normal i'd say
1 Cloves
Recipe
Throw it all in a large pot with 2 litres of water. Bring to the boil, for 2-3 hours. Keep an eye on the stock that its not thinning to quickly, and skim any fat off the top as that's a bit nasty.
Once its finished, make sure to pass the stock through a sieve or strain it somehow. Save the liquid gold somewhere and discard the rest.
TIP: do not salt the stock, keep it as is, salt the food you cook it with and test it to make sure it's seasoned!
Chicken stock, you can legit use this for anything. Keep in the fridge for a week or like 3 months in the freezer. Enjoy!
