This meal is super easy and warms you up. Keep tasting the broth at the end, if its not chickeny enough add a stock cube, or maybe it needs more soy sauce! All up to you! Cook to how you like it :D
Ingredients for 2-4 people
800-900 ml of chicken stock depends how much broth you want!
200g chicken you can use whatever's easiest, just make sure not skin or bones
1 tsp chopped ginger finely chopped
1 garlic clove
A pack of noodles i prefer thicker, udon noodles
1 spring onion thinly green bits for garnish
1 carrot peeled and sliced as per picture (optional)
1 celery thinly sliced
2 tsp soy sauce
Black and white sesame seeds for garnish
Recipe
Pour the stock into a large pan, add the chicken, ginger, garlic, carrots and celery, bring to the boil and then simmer for 20 minutes until the chicken is tender.
Take the chicken out, and using a fork, shred the chicken before returning to the stock. Add the whites of the green onion, soy sauce and noodles. Simmer until the noodles are cooked as per the packets instructions.
Ladle the contents evenly into a bowl, and sprinkle with sesame seeds if you have them and the greens of the green onions. Serve with extra soy sauce on the side!
Cut a long thin triangle down the side of the carrot length ways, then slice.
