Not got much to say here if i'm honest. I've used this aubergine with a fair few things:
White Rice
Egg Fried Rice
Dumplings/Gyoza
Kimchi
Spicy Asian Cucumber Salad (if doing this, prep before as the longer it has to marinate the nicer)
This works as the main that can be added with a side that something on the asian side of cooking.
Ingredients for 2 people
2x Aubergine
2 tbsp miso
1 tbsp seasme oil
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp maple syrup
2 tbsp hot water
2x Aubergine
Any kind of asain marinating sauce you like thats kinda sweet? I personally like using Yoshida's Original Gourmet sauce from Costco
Garnish
Sesame seeds
Chopped green onions
Sides
Cucumber Salad (6 Mini cucumbers)
White sushi rice (250g)
Vegetarian Dumplings (as many as you want each)
Kimchi
Recipe
Preheat your oven to 180°C, and line a roasting tray with baking paper.
If doing the proper way, combine all ingredients for the sauce together and mix well. If cheating, skip this step.
Cut the aubergine length ways, and without piercing the skin, deeply slice diagonals to produce squares in the aubergine. The more cuts you do the more sauce will be absorbed. See illustration to the side if confused.
Brush the sauce of your choice into the aubergine, making sure to get it into the cracks.
Place them on the tray face up (like the picture) and bake for 30-40 minutes or until the aubergine is soft and to your liking.
Add the garnish and serve!
How to cut the aubergine.
Short Grain Rice
Rinse the rice in cold water 2 or 3 times, and drain. Place the rice in 500ml of cold water and bring to the boil.
Lower the heat, and and cook for 15 minutes. Keep an eye to make sure it doesn't boil dry.
Fluff up and leave to stand for 5/10 minutes. Optional.
Ladle in and mix sushi seasoning if you have it or leave plain.
Veggie Gyoza
Find a good bag of frozen or gyoza you like. I use CJ Bibigo Gyoza Dumplings. Packet should look like that if you click the link. Serve with a small pot of soy sauce.
Option 1:
Steam them in round bamboo steamer, follow the packet of your choosing but i usually do about 10 minutes. Check on your aubergine and put them in when the top looks medium cooked for timings.
Option 2:
Just fry them on each side until golden innit.
Kimchi, serve as is!
