It also does not contain any oranges, i gave it this title because of the colour it is. NOT gonna lie, this is pretty close to that piperade if you tried the rats meal. But a few different things, either lumpy or smooth, its a really nice soup that you could cook a chicken breast with and have with rice as a sauce or just eat as a soup. I really like it, quite flavourful tbh. I actually thought it was nicer the day after i cooked it, just whacked it in a glass jar and then to do its thing and then yea tastes class.
Ingredients for like 4 people maybe
2 red bell peppers
6 tomatoes just like a pack of ones you'd use in a salad
1 small onion not red white or the other one is fine
2 garlic cloves
Decent bit of parsley
1 bay leaf
3 - 4 twigs of thyme
500ml Chicken or Vegetable Stock
1/2 tbsp of oregano
Salt & Pepper
Recipe
To remove the skins, heat the oven to a fairly high heat, around 220°C for around 15 minutes, put the peppers and tomatoes skin side up and roast until charred. At this point the skin should just slide off. Peel them and chop loosely. Chop finely if not blending.
Fry the onions and garlic on a low heat, for about 8 minutes or until soft. Then add the tomatoes and their liquid for about 10 minutes. Do not let them brown. Add the pepper for a bit to soften.
Add the stock of choice, parsley and oregano. Bring to the simmer and turn to a low heat. If you are going to blend it, remove the bay leaf and sprigs of thyme and blend continue to let simmer until it is at a consistency you are happy with.
